Italian White Bean Salad with Shrimp


This tasty salad is best served at room temperature on a bed of arugula. If you do not have a rocket, you can use spinach. You can also substitute chicken breast cooked shrimp.

serves 4-6

ingredients

15 oz white beans, rinsed and drained
2 stalks celery, chopped
2 cloves garlic, minced
¼ cup chopped fresh parsley
1 teaspoon chopped fresh rosemary leaves
¼ cup extra virgin olive oil
½ teaspoon fresh lemon zest (yellowing of the skin external only)
2 tablespoons fresh lemon juice
1 tablespoon balsamic vinegar
Salt and freshly ground black pepper, to taste
1 pound peeled and deveined medium shrimp grilled
5 oz organic arugula, optional

Directions

1. In a medium bowl, combine beans, celery, garlic, parsley, rosemary, olive oil, lemon zest, lemon juice and balsamic vinegar and mix gently. Season with salt and pepper.
